You Mami is a Japan - made miso derived from soy, rice and salt. Suitable for seasoning food after cooking. You Mami produces red (aka) and white (shiro) miso.
The white miso (Shiro) has a slightly sweeter taste than red miso (Aka), which is aged longer and therefore is characterized by a more intense, full-bodied and rich taste. White miso is the most versatile and lends itself to multiple applications, while red miso is suitable for foods with an intense flavor, particularly suitable for meat marinades and grilled meats. Miso gives a wonderful salty taste known as "Umami" the so called "fifth taste".
